Last week I received a phone call from the associate producer of the Dr. Oz show! She asked me if I would participate in this Tuesday’s show (the filming is on Tuesday) in two different segments. I was thrilled! One segment was to talk about how often I purchase organic chicken, and how to understand the labels and know what you are buying. She then told me they were also doing a segment on the health benefits of buckwheat and asked me if I would submit my buckwheat pancake recipes! They are asking 10 of us to submit our recipes and will choose the ones that fit into the show the best. We shall see what they think of mine! Fingers crossed!
I have to tell you, it has been an exciting week; however, just an hour after I received the call, I received the terribly sad news that my Aunt Marie passed away… Aunt Marie battled breast cancer, which spread to her bones and lungs. I am traveling to New York tomorrow to be with my cousins and celebrate the life of their incredible mother on Tuesday. And those who know me will not be surprised when I tell you I have to find a positive in this devastating time for my family, and that is: Today is my Aunt Marie’s wedding anniversary, and she joined her husband, my Uncle John, in heaven just in time to have their anniversary dance. One they have not had since he died in 2002. J
Even though I will not be able to attend the filming on Tuesday, I decided to still make the time to prepare and take pictures of my buckwheat pancakes. I actually appreciated the distraction from the sadness this morning. My husband Kevin and I usually make breakfast together on Sunday morning. Today he got his fill of buckwheat pancakes, cinnamon buckwheat pancakes, almond buckwheat pancakes, and pumpkin oatmeal pancakes! Check out the recipes below and let me know what you think?
Note that all of my recipes are gluten free, dairy free, soy free, and cane sugar free!
Aside from a delicious warm meal, buckwheat is an excellent source of manganese, copper, magnesium, fiber, and phosphorus. For more information on the health benefits of buckwheat, visit here or watch the Dr. Oz show! ;-)
